Cheesy Cilantro Pesto Flatbread Pizza
flat bread come in sheets of 12" by 8"
sliced sweet red pepper
oven roasted chicken cut up into small pieces
sharp cheddar cheese
mozzarella cheese or Italian cheeses
2 T soy sauce
1 T brown sugar
1 T white wine vinegar or other white vinegar
1 clove crushed garlic
dash salt and black pepper
Mix marinade together let set 15 minutes.
Pour marinade over 1 pound of raw chicken breast strips and let marinate for 2 hours.
Lay marinated chicken on foil bake in pre-heated 400 degree oven until done about 15-20 minutes, cut up into small one inches pieces.
Ingredients for Cilantro Pesto
1 cup cilantro
1/3 cup olive oil
1/3 cup English walnuts
1/3 cup Parmesan cheese
dash of salt and black pepper each
Blend cilantro, olive oil, walnuts and Parmesan cheese in food processor until chopped up fine.
Lay piece of flat bread on a cookie sheet
spread 1/3 of cilantro topping on flat bread, top with sliced peppers, mushrooms and chicken
Top chicken and veggies with mozzarella and sharp cheddar cheeses, bake at 375 degrees for 12 minutes, until bubbly.
