Healthy Blueberry Waffles are so delicious you won’t know they are healthy for you! Packed with white whole wheat flour, flax and blueberries. You can make these delicious waffles with white flour or white whole wheat, but let me tell you, the white whole wheat gives a much better flavor than plain white flour, plus it is packed with the whole grain nutrients. Once you try white whole wheat, you will be amazed how good it tastes. I use it in all my flour recipes, it tastes way better than the traditional brown whole wheat flour, yet is has just as much fiber and nutrients. Either way you can make these Healthy Blueberry Waffles, white or whole wheat, they make the ultimate breakfast comfort food. If I am lucky evough to have left overs, I refrigerate them and toast them in the toaster for breakfast the next day. They are so awesomely, sweet, tasty, and satisfying.
Mix all your dry ingredients in large bowl.
Add eggs and buttermilk.
Mix eggs and buttermilk well then add melted butter.
Lastly add the wonderful blueberries, they always steel the show.
Mix in the blueberries. If you use frozen blueberries, be sure to coat with a couple tablespoons of flour before adding to batter, so they don’t make your batter turn blue.
Hot out of the waffle iron, top them with butter, maple syrup and a dusting of powdered sugar. Ooh breakfast does not get any better than this!
