Apple Chip Salad
Directions
Apple Chip Salad 4 boneless skinless chicken breasts 8 cups mixed greens ½ cup English walnuts 1 tomato thinly sliced ¼ cup blue cheese crumbles Salad Dressing 1 Tablespoons olive oil 2 Tablespoon sugar 2 Tablespoons apple cider vinegar 1/3 cup mayonnaise 1 teaspoon mustard ¼ teaspoon salt Dash black pepper Marinade for chicken breasts 1/2 cup apple juice 1 Tablespoon soy sauce 1 garlic clove crushed 2 Tablespoons diced onion Dash black pepper ½ teaspoon salt Instructions Marinate chicken for 1 hour or more. Cook chicken breasts on gas grill 3-4 minutes on each side, until internal temperature is 160 degrees. Cool slightly and cut into ½ inch strips. Divide chicken, greens, walnuts, tomato, blue cheese, and walnuts evenly on 4 plates and top with salad dressing. Garnish salad with dried apple chips and serve. Serves 4 |
