Easy Mexi Chicken Bake

Ingredients 1 15 oz can black beans drained 2 cups cooked wild rice or your favorite rice 1 pound chicken breasts cut in cubes and browned 1 clove garlic crushed 1/2 onion chopped 1/3 cup fresh cilantro plus 4 Tablespoons chopped to garnish 1/2 cup sour crème 11/2 cup coby jack cheese shredded 1 cup salsa 1/4 teaspoon salt 1/4 teaspoon salt 1/2 teaspoon cumin 1 cup diced tomato plus Taco chips to garnish Instructions Add 3 Tablespoons of oil to large frying pan, add minced garlic and cut up raw chicken, salt and pepper. Cook chicken, stirring occasionally over medium heat. When chicken starts to brown add chopped onion and cook 3-4 additional minutes, until onion is tender. Add Rice, sour crème, salsa, black beans, cumin, 1/3 c cilantro to chicken mixture and stir well. Add all to 10 x 13 baking dish, top with cheese and 2 Tablespoons chopped cilantro and bake 25 to 30 minutes at 350 degrees |
