Simply pour tomatoes whole or diced into a saucepan with herbs and simmer, for ten minutes, add a couple more ingredients and your done. This is such a wonderful cold night satisfer that goes great as a meal or appetizer. There is nothing like homemade tomato soup, to make you feel warm and cozy on cool fall night. I made this recipe with my own homemade canned tomatoes but can purchase your canned tomatoes from your local market, if you don’t have your own. Choose either whole or diced canned tomatoes, whichever you prefer. You start by pouring your tomatoes into a 3 quart sauce pan, add thyme and parsley and heat the ingredients up to a high simmer and simmer 10 minutes. Next add some baking soda to neutralize the acid in the tomatoes, before you pour in the the half and half. Can’t emphasize this enough, the backing soda goes in after the tomatoes have simmered and before you add the half and half. Next add the fresh grated Parmesan cheese which adds a really nice rich flavor to the tomato soup. Serve the soup with crunchy seasoned croutons and fresh grated Parmesan cheese.

32 ounces canned tomatoes whole or diced
2 cups half and half cream
1/2 teaspoon thyme
1 bay leaf
1 T dried parsley or 2 T fresh parsley
1/2 teaspoon baking soda
1/2 fresh grated Parmesan cheese plus more for garnish
Salt and Pepper to taste ( I start with a dash salt and pepper each, then add more later if needed)
Pour tomatoes, thyme, bay leaf, parsley, salt and pepper in to a 3 quart sauce pan. Bring all to a light boil and simmer for 10 minutes. Remove from heat add 1/2 teaspoon baking soda. Stir quickly, then add 2 cups half and half, and grated Parmesan cheese, heat back up for a few minutes on low heat. You simply heat it up long enough to melt the cheese and bring the soup back up to higher temperature to serve.
*** have the half and half ready, once you add the baking soda the tomatoes will foam up pretty high in the pan, pouring in the half and half settles it down right away.
****Be careful do not let the soup boil once you have added the half and half, it would taste fine, it just wont look as pretty.
