Balsamic Veggie Chicken Kabobs are awesome tasting, made with grilled chicken, mushrooms, peppers, red onions and zucchini. The secret to making these kabobs so good is first marinating them in marinade made of balsamic vinegar, fresh garlic, black pepper and soy sauce. This marinade is terrific adding a great flavor to both the veggies and the chicken. Very little prep time needed, cut up your veggies and chicken add to a bowl and top with the marinade. Let veggies and chicken hang out together in your fridge for at least 30 minutes, an hour is better. Then you simply put them on kabob sticks and grill them. Depending on your grill, they will only take about ten minutes to cook on your grill. Soooo easy and soooo delicious, looks like you did a lot of work for this one, but definitely not the case. Start with fresh veggies.
Add the cut up veggies to a glass bowl.
Add the cut up cubed chicken and pour the marinade over the top and let set to marinade for 30-60 minutes or longer.
Get them ready for the grill. Put the veggies and chicken on kabob sticks.
Off the grill and ready to be served.
Balsamic Veggie Chicken Kabobs
Directions
Ingredients 1 Red or Orange Sweet Pepper cut up in one inch cubes 1 Green Peppers cut up in one inch cubes 1 Red onion cut up in one inch cubes 1 Zucchini 10 inches long, cut up in one inch cubes 12 Fresh Mushrooms left whole 1 pound chicken breast cut up into one inch cubes 2 Tablespoons corn oil or canola 4 Tablespoons soy sauce 4 Tablespoons balsamic vinegar 1 large clove of crushed garlic or two small cloves 1/4 teaspoon black pepper Instructions for Balsamic Garlic Marinade Make marinade by combining corn oil, soy sauce, balsamic vinegar, garlic and black pepper. Stir well and let set for 5 minutes Add to large glass bowl chicken, peppers, onion, zucchini and red onion. Pour Balsamic Garlic marinade over the chickens and vegetables. Let set to marinate for at least 30 minutes to one hour in refrigerator. Remove chicken and vegetables from refrigerator and using kabob sticks add chicken and vegetables to sticks, rotating chicken with vegetables. Heat up gas grill to medium heat.
