Balsamic Veggie Chicken Kabobs
Directions
Ingredients 1 Red or Orange Sweet Pepper cut up in one inch cubes 1 Green Peppers cut up in one inch cubes 1 Red onion cut up in one inch cubes 1 Zucchini 10 inches long, cut up in one inch cubes 12 Fresh Mushrooms left whole 1 pound chicken breast cut up into one inch cubes 2 Tablespoons corn oil or canola 4 Tablespoons soy sauce 4 Tablespoons balsamic vinegar 1 large clove of crushed garlic or two small cloves 1/4 teaspoon black pepper Instructions for Balsamic Garlic Marinade Make marinade by combining corn oil, soy sauce, balsamic vinegar, garlic and black pepper. Stir well and let set for 5 minutes Add to large glass bowl chicken, peppers, onion, zucchini and red onion. Pour Balsamic Garlic marinade over the chickens and vegetables. Let set to marinate for at least 30 minutes to one hour in refrigerator. Remove chicken and vegetables from refrigerator and using kabob sticks add chicken and vegetables to sticks, rotating chicken with vegetables. Heat up gas grill to medium heat. Cook kabobs approximately 10 minutes or until chicken is done, turning the kabobs several times while they cook. **Makes 8 medium size kabobs |
