Mushroom Chicken with Rosemary
Directions
Ingredients 2 pounds raw chicken breasts cut in 2 inch strips about 3/4 inch thick 2 Tablespoons cooking Sherry 1 Tablespoon butter 3 Tablespoons fresh parsley or 1 Tablespoon dry parsley 2 Tablespoons flour 2/3 cup milk 1 - 8 ounce package of cream cheese 1/2 cup water 1 pound raw mushrooms sliced 1/4 teaspoon black pepper 1/2 teaspoon salt 1/2 teaspoon dried rosemary 1/4 cup diced raw onion Instructions Melt butter in large frying pan, add sliced mushrooms, and onions and cook over low heat 5 minutes. Add cream cheese to onion mushroom mixture and continue cooking on low heat, for 5 minutes. Mix flour with cold milk in sepearte container with fork or wire whip. Pour milk mixure over onion mushroom mixture. Stir in water, sherry, salt, pepper, rosemary, and parsley. Cook for 5 minutes longer until sauce is a creamy consistency. Lay raw chicken strips in large cover baking dish and pour creamy mushroom mixture over chicken breasts. Bake in pre-heated 350 degree oven for one hour |
