Broccoli Quiche Cup

Ingredients 1 1/2 cups all purpose flour (or 3/4 cup all purpose flour and 3/4 cup whole wheat) 1 Tablespoon baking powder plus 2 Tablespoons 1/2 teaspoon salt 5 Tablespoons butter 1 1/4 cup buttermilk plus 1 Tablespoon 5 large eggs 1/2 cup Swiss cheese 1/2 cup cheddar cheese 4 - 6 slices of cooked bacon cut into one inch pieces Pre-heat oven to 375 degrees Crust In large bowls, add flour, baking powder, and salt to bowl and mix well. To this mixture add 4 tablespoons of butter. Cut the better into the flour mixture with a pastry cutter, large fork, or pulse to fine pebble texture in food processor. Next, add 3/4 cup buttermilk and stir with spoon. Mixture will look like large crumbs. Dump on to light floured surface and work into ball with your hands. Knead 8-10 times, by smashing ball to flat circle about 8 inches diameter, then fold over with palm of hand, Roll dough into a rectangle shape to about 1/4 inch thickness, if dough sticks while rolling out, sprinkle with a little more flour and flip the dough. Use a large cup or biscuit cutter to cut circles to fit in muffin pan. Once you cut them you can also roll them out a little more to make them larger to fit in the muffin pan. Spray muffin pan with vegetable spray or butter them to prevent the crust from sticking to the pan. Add the biscuit circles to the muffin pan. Filling Melt 1 Tablespoon butter in large frying pan over medium heat, add 2 Tablespoons butter and blend in with butter over low heat. Add 1/2 cup butter milk a little at a time, to make a white sauce. (Add about half of the buttermilk then add the rest) Stir until you have a nice thick sauce. Stir in the cheeses and stir until all the cheese is melted and forms a nice sauce. Add the bacon. Scoop this mixture into the muffin pan that has been lined with the dough circles. Bake at 375 for |
