Healthy Creamy Mushroom Meatballs
Directions
Ingredients 1 1/2 pounds lean ground beef 1 1/2 cup green pepper chopped into small pieces 1 1/2 cups uncooked jasmine or other white rice 1/2 cup wheat germ (optional) 1/4 teaspoon black pepper 1/2 teaspoon salt optional 2 cans cream of mushroom soup 2 cans of water (using the empty mushroom soup can to measure water) 1 can of milk (using the empty mushroom soup can to measure water) 2 Tablespoons fresh parsley chopped fine or 1 Tablespoon dried parsley Instructions ln large glass bowl combine 1 cup of rice, wheat germ, black pepper, salt, green pepper and mix well. Next, add ground beef and mix well with rice mixture. Form into meatballs, little larger than a golf ball. Brown meat balls over medium heat a few minutes on each side. Add browned meatballs to medium size roaster pan or other large pan that comes with lid for covering meatballs while they bake. Pour over the meatballs, two cans of mushroom soup, water and milk. Gently spread soup over meatballs with spatula, as it will be somewhat thick, being careful not to break up meatballs. Sprinkle the top of meatball soup mixture with parsley and 1/2 cup uncooked rice over the top of the meatballs. Cover the meatballs with lid and bake at 350 for 45 minutes. 6 servings. |
