Roasted Red Sweet Pepper Chicken Soup

Ingredients 2 cups shredded cooked chicken - make your own or use rotisserie 2 red sweet bell peppers roasted and peeled or 1 small can of chilies 6 cups of chicken broth or 4 14.5 ounce cans of chicken broth 3 Tablespoons balsamic vinegar 1/4 teaspoon of black pepper salt to taste 1/4 cup diced onion 8 ounce package of fresh mushrooms, prefer Portobello 1/4 cup barley optional 2 bay leaves Add all of above to large pan and cover bring to a boil and simmer for 45 minutes. |
