Pecan Cranberry Oatmeal Cookies

Ingredients 2 cups oatmeal 2 1/2 cups white whole wheat flour or regular all purpose flour 1 1/2 cup brown sugar 1 teaspoon salt 2 Teaspoons baking soda 1 1/2 teaspoons cinnamon 1/2 teaspoon nutmeg 1 cup chopped pecans 1/2 cup melted butter 3 eggs well beaten 1 cup dried cranberries 1/2 cup buttermilk Preheat oven to 350 degrees In large bowl mix together oatmeal, flour, brown sugar, salt, baking soda, cinnamon, cinnamon, nutmeg, cranberries and pecans, mix all well together. Add beated eggs, buttermilk and melted butter to flour mixture, mix well. Dough will be stiff, drop by spoonful's on parchment paper on cookie sheet, bake at 350 degrees for 10 to 12 minutes, until slightly browned. |
