Apple Chicken Salad 2
Directions
Apple Chicken Salad 1 pound chicken breasts cut 4 portions 8 cups mixed greens ½ cup English walnuts 1 tomato thinly sliced ¼ cup blue cheese crumbles Apple Salad Dressing 3 Tablespoons canola oil or corn oil ¼ cup apple cider or 100% apple juice 1/3 cup mayonnaise ¼ teaspoon salt Dash black pepper Marinade for chicken breasts 2 teaspoons sugar 1 Tablespoon apple cider vinegar or white vinegar ½ teaspoon paprika 1/3 cup orange juice 1/2 teaspoon crushed rosemary leaves 1 garlic clove crushed Few drops hot sauce 2 Tablespoons diced onion Dash black pepper ½ teaspoon salt ½ teaspoon basil Marinate chicken for 2 hours or more Bake in oven at 375-degree oven for 35 to 45 minutes until done internal temperature at 160 degrees or cook on grill. Cool and cut into ½ inch strips. Arrange on each plate 2 cups of mixed greens, divide evenly on each plate, the thinly sliced tomatoes, red onions, blue cheese crumbles, parsley, dried apple slices, and English walnuts. Top with cooled chicken strips and salad dressing. Makes 4 salads. |
